it has been a while and I have not posted a momo or momo variant recipe and hence I was exploring some options to post it. while I was thinking of it, my husband suggested the steamed bun recipe that we usually get from Asian restaurants. the stuffing that we get is usually spiced tofu or mushroom, but I decided to give a twist to this recipe. the first twist is the stuffing. I have used vada pav aloo masala as stuffing for this recipe which makes it a lip-smacking spicy snack. the other twist is to steam it. traditionally these are steamed in a wooden basket which may not be common for Indian households and hence I have used kadai to steam it. you would be really pleased with the result, especially the softness and fluffiness with the spicy stuffing.

furthermore, some more additional tips, suggestions, and variants to the steamed bun recipe. firstly, i have used the combination of plain flour and yeast for the bun preparation. this combo is the traditional choice, but you may also use baking soda and powder as its alternative. you may need a pinch of baking powder and ¼ tsp soda. secondly, the stuffing for this is completely open-ended and you may choose any stuffing as per your choice. moreover, if you wish to use minced meat-based stuffing, you may very well use it. lastly, while placing the bun for steaming, keep sufficient gaps between each other. during the steaming process, it expands and may need extra space to get the proper shape and size.

how to make aloo stuffing for steamed bun recipe:

  • firstly, in a large kadai heat 2 tbsp oil. add 1 tsp cumin, ½ tsp chili flakes, 2 chilies. saute slightly until it turns aromatic.
  • add ½ onion, finely chopped, and 1 tsp ginger garlic paste. saute until the onions soften slightly.
  • further, keeping the flame on low add ½ tsp turmeric, ½ tsp cumin powder, ½ tsp garam masala, 1 tsp chaat masala, and ½ tsp salt.
  • saute until the spices turn aromatic.
  • now add 4 potatoes and mix well combining everything well.
  • finally, aloo masala is ready. keep aside to cool completely.

how to knead the dough for a soft bao bun:

  • firstly, in a large bowl take 1 cup warm milk, 2 tsp sugar, and 7-gram dry yeast.
  • mix well making sure everything is well combined. I have used instant dry yeast, so I am not waiting for the yeast to activate.
  • add 2 cups maida and ½ tsp salt.
  • start to knead to dough gently without putting much pressure.
  • knead to a smooth and soft dough adding milk as required.
  • tuck the dough and cover it with a cloth.
  • rest in a warm place for 2 hours or until the dough doubles.
  • after 2 hours, punch the dough and knead to smooth dough.
  • pinch a ball-sized dough and dust with maida.
  • roll gently, keeping the sides thin.
  • now place a ball-sized aloo stuffing in the center.
  • start to create pleats making sure to have pleats close by.
  • pinch off the excess dough and seal tight.
  • rest the bao bun for 10 minutes, before steaming.
  • now steam the bun leaving some gap in between. make sure to steam for 10 minutes or until the bun turns shiny and soft.
  • finally, enjoy a steamed bun when it is hot.

notes:

  • firstly, adding yeast makes the bun super soft. recommend not to skip yeast and make sure to use good quality.
  • also, you can vary the stuffing to your choice.
  • additionally, after steaming the bun, rest for 5 minutes before opening the lid. sudden exposure to cold air will shrink the bun.
  • finally, the steamed bun recipe tastes great when served hot and when stuffing is spicy.
